77º is the mandatory alcoholic volume that the brandy needs to have to be used in the production process of Port wine. This type of brandy is called wine brandy and is a young liquid, free from defects, clear and colorless, which must comply with strict qualitative standards established by law, so that it does not interfere with the aromas and complexity of the wine.
77º Brandy Role in Port Wine
What makes Port Wine different from other wines, is the interruption of the fermentation stage. After two or three days, this phase is interrupted and neutral brandy with 77º is added, which will lead to the natural sugars of the grapes not being completely transformed into alcohol. This process gives Port wine a naturally sweet aroma and an alcoholic volume between 19º and 22º degrees, stronger than the other wines.
